These pork chops are spicy, sweet, tangy and delicious!
The biggest surprise is that they only take 10 minutes to cook.

Be sure to buy boneless, loin pork chops and then trim away any of the extra fat around the edges.
These one inch thick chops are so big, each one is a serving!
Sprinkle some salt and a few grinds of fresh pepper on each chop.

Spray a non-stick frying pan with cooking spray and heat the pan on medium high heat for about 30 seconds.
Add four 1 inch thick chops to the pan and sear them for 1 minute on each side.
Sear means to brown quickly on medium high or high heat: it seals in all the juices.
Now turn the heat down to medium, cover the pan, and continue cooking the chops for another 4 minutes on each side.
If you have bone-in pork chops they will take another minute or two on each side to cook.
When you cut into the chops they should be fully cooked and only have a very slight pink color to them.
Cover them with tinfoil to keep them warm while we make the sauce.

Use the same pan that you cooked the pork chops in…and don’t bother to wash it!
Add the 1/2 cup of peach preserves, 2 Tablespoons of mustard and 1 Tablespoon of water to the pan.
Cook the sauce for 2 minutes on medium heat, stirring it constantly.
Spoon the sauce over the pork chops and serve them with some rice and steamed vegetables.
