Santa Fe chili is a great Tex-Mex dish that will feed a crowd…or just you…with lots of leftovers.
It takes only 15 minutes to prepare, but 2 hours to cook…so don’t even thing of starting this recipe unless you are going to be around for the next few hours.
For equipment you will need…a cutting board and knife…a colander…and a large stock pot or Dutch oven with a cover.
Ingredients needed for Sante Fe chili are:
1 pound of …browned… ground beef
1 medium…chopped…onion
1 can each of…pinto beans…kidney beans…and black beans…which have been rinsed…and drained
1 can of corn
1 can of diced tomatoes with peppers
1 can of stewed tomatoes
1 8 oz. can of tomato sauce
1 packet of Taco Seasoning Mix
1 packet of dry Ranch Dressing mix
2 cups of water
After the chili is cooked you can garnish it with…
Some sour cream…
Some diced green onions…
and some Corn Chips
A word of caution: don’t open the bag of corn chips until the chili is ready to serve…cause if you are anything like me…there won’t be any left by the time the Chili is cooked!
Let’s start cooking:
We are going to put all of the ingredients into a large pot.
Start with the ground beef…then add the onions…all the drained beans and corn…the stewed tomatoes…diced tomatoes and the tomato sauce…then the packet of taco mix…and the packet of ranch dressing…now pour 2 cups of water over the whole thing.
With a large spoon mix it all together.
Then put the pot on the stove top…cover it with the lid…and Bring everything to a boil…with Big…rolling bubbles.
Then turn the temperature down to Simmer, and cook for 2 hours
Give it an occasional stir!
This looks terrific!
To serve the chili, put a few scoops into a bowl…garnish it with a dollop of sour cream…a few green onions…and Who ate the corn chips!
