Chicken Fajitas are a quick and healthy dinner that everyone seems to love!
An ingredient and equipment list is at the end of this video.
Start by measuring the spices into a small bowl
• 1/2 teaspoon of garlic powder…
• 1/2 teaspoon of onion powder…
• 1 teaspoon of oregano…
• 1/2 teaspoon of cumin…
• 2 teaspoons of sugar…
• And 1/2 teaspoon…or more…of crushed red peppers …but be careful…these are HOT!
Mix these together and set the bowl aside for just a moment.
Slice 1 pound of boneless chicken breasts into thin 3-inch long strips.
Set the strips in a flat, glass baking dish and… with the help of a fork…add the juice of one lime.
Mix in the bowl of dried spices and let the chicken marinate while the vegetables get prepared.
Now go wash your hands!
Prepare 1 medium onion…slicing off the top…and then cutting it in half…peel back the skin… and start slicing it into about 1/4 inch thick slices.
Slice 3 peppers…cutting off the four sides from the stem and seeds. Now slice each section into strips, also about 1/4 inches wide.
You can heat up the tortillas in the microwave between two sheets of paper towels…the top one should be a bit damp… or…
Preheat your oven to 325 degrees and…
In an oven safe dish…wrap eight tortillas in a clean dish towel.
Cover the dish with tinfoil and put it in the oven……. for about 10 minutes to warm up.
While you are at it…stick an oven-safe serving dish in the over to warm up as well.
In a large, preheated frying pan…heat 1 Tablespoon of olive oil over medium high heat.
When the oil looks shimmery, add the sliced onions and peppers and fry or sauté them for 2-3 minutes or until they begin to soften.
Season them with some salt and pepper and remove them from the pan.
Place the vegetables on the heated serving dish and cover them with tin foil where they will continue to soften.
Add the chicken and quickly sauté it until it’s cooked through – about 5-6 minutes
Add the cooked chicken to the serving platter.
Place a warm tortilla on a plate; add chicken and peppers and onions.
Fold over the bottom…and then the two sides of the tortilla.
You can garnish Chicken Fajitas with salsa, guacamole, and sour cream.
