Butternut Squash Soup

Butternut Squash Soup
serves 4 - 6
- 3 and 1/4 pounds of butternut squash - peeled and cut into chunks
- 1 large onion - chopped
- 2 cloves of garlic - chopped
- 3 tablespoons of butter
- 1 teaspoon of cinnamon
- 3 and 1/2 cups of chicken stock (or vegetable stock)
- 2 tablespoons of maple syrup
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
In a large pot melt the butter on medium temperature and add the onions.
Cook the onions for about 5 minutes.
Stir in the garlic and the cinnamon and cook for another 30 seconds.
Add the squash and cover with 3-4 cups of stock
Bring pot to a boil then turn down the heat and simmer for about 25 minutes or until the squash is tender.
Puree the vegetables in small batches. Put puree in separate pot. Stir in the maple syrup.
Add cooking stock according to desired thickness; season with salt and pepper.

Great video Kathy!
For this soup I would personally use a handblender and just do it right in the pot. This way one need not do it in batches.
As a garnish, I highly recommend some chopped flat-leafed (italian) parsley. somehow the combo is quite perfect.

Thanks Will! Using a stick blender is great if you have one, but not everyone does! In fact I have discovered that most beginner cooks own one pan and a blender and that’s about it!
There are tons of different garnishes that work really well with butternut squash soup. I love parsley on just about everything. Toasted coconut also works really well!

If you have a “bamix” you can puree the pumpkin in the same pot in which you cooked it and save yourself having to use and wash another utensil.

Laila you are so right! I love mine! For those of you who are unfamiliar with a “bamix“, it is a hand held stick blender. Many new cooks only have a blender which is great for making smoothies and frozen mixed drinks.

Hi kathy, I subscribed to your podcasts on Itunes and your videos are cute, short, and great! I was wondering if you could just replace the squash in this soup with pumpkin or would the consistency go wrong..?

I think you might be better off trying my Pumpkin Soup Recipe. It is made with canned pumpkin and cooks up in a flash!
