I was craving boiled eggs, but I wasn’t quite sure what the proper technique and nuances were. There are a million convoluted formulas on the internet, so your simple, quick video was a lifesaver. In no time flat, I was able to enjoy wonderful boiled eggs this morning. Thank you, Kathy!

BTW a great trick for peeling hard cooked eggs is to crack the shell and submerge the cooked egg in a bowl of ice water. Within a few minutes the water will seep under the shell and it will peel right off! If you need to peel a lot of eggs (like at Easter) this is a great trick.
Cheers

Hi, Kathy:
Hearty thanks from me for all the videos you made for us starters. None of my close ones would teach me patiently. Not even my mom. She always cut me off halfway and said:”What? You don’t even know the basics?” I feel so hurt.
About boiling eggs. My kitchen would be very cold in the winter. After bringing the water to boil, should I just turn down the stove to “1” or “2” and let it simmer? And if I set the stove on 1 or 2, should I set the timer shorter? (10 min probably?)
And one more question: Nutritionists suggest to eat onions raw. But raw onions are too hot for me. Are there any tips for getting rid of the hotness without heating the onions?
Thanks in advance and my best wishes to you:)

Hi Lily,
Do a trial run cooking your eggs to see if it is necessary to keep the stove setting on 1. (WOW! you must have a really cold house!)
I too do not eat raw onions. I sometimes soften them in the microwave for about 30 seconds. They are not actually cooked but they do seem to have less of a “bite”. You could also try marinating the raw onions in salad dressing to soften them.
Cheers,
Kathy
