This shrimp scampi dish is great as finger food…OR served over pasta!
It takes only minutes to cook, ...so we need to get everything prepared and ready to go …BEFORE we turn on the stove

Let’s start with the garlic…peel and mince 4 cloves of garlic and set it aside.

For four to six serving of this shrimp scampi, we need two pounds of peeled… extra-large shrimp.
There are about 21-25 shrimp per pound.
You can buy it already peeled or peel it yourself. Check out my blog to learn how to peel shrimp.

Now pour…into a glass measuring cup… 1/4 cup of dry white wine.
Add 1/4 cup of clam juice to the wine…set that aside as well.

Measure 1/8 teaspoon of pepper and 1/4 teaspoon of salt… into a small dish
Squeeze the juice from one lemon…then strain out the seeds. Measure out 2 Tablespoons…and set that aside.

Chop 2 Tablespoons of fresh parsley and set that aside too!

Finally, we need 4 Tablespoons of …COLD… unsalted butter… cut into 4 pieces. Keep the butter in the fridge until we are ready to use it!

OK…Everything is ready…time to startcooking

Heat 1 Tablespoon of olive oil in a Dutch oven over medium-high heat for about a minute or until the oil looks like its shimmering.
Add garlic and cook until you start smelling it… about 30 seconds. Be careful not to burn the garlic!
Add the wine and clam juice, and the salt and pepper.
Bring this mixture to a boil.

Add the shrimp, and cover the pot. Let everything cook for about 2 minutes, or until shrimp look almost translucent.
Be sure to use the timer, shrimp gets tough if it’s over cooked!

Reduce the heat to medium and give everything a stir.
Cover it again and continue cooking until shrimp are just cooked through…about 2 (more) minutes.
Using a slotted spoon, transfer the shrimp into a serving bowl.

Bring the sauce to boil over medium-high heat and cook it for about 1 minute… The sauce is going to reduce down to about half of what you started with.
Whisk in the cold butter…1 Tablespoon at a time…into the sauce.
Now stir in the lemon juice and the parsley.
Pour the sauce over the shrimp that’s in the serving bowl.
Taste one of the shrimp and decide if it needs more salt or pepper!
Garnish the scampi with lemon wedges and parsley.
