Welcome to startcooking.com…I’m Kathy Maister
Today…I’m going to show you how to make spinach lasagna.
You could also make this with ground beef or turkey sausage…Check my blog to see how!
We are going to be using
No-Boil Lasagna noodles …
Store bought pasta sauce and …
Pre-shredded cheese…
All of which are HUGE time savers when making this dish.
All the other ingredient and equipment are listed at the end of this video.
*************
Start by pre-heating your oven to 400 degrees!
****************
The spinach and ricotta cheese layer needs to get prepared…then we can start assembling the lasagna.
Defrost one 10 ounce box of spinach in the microwave. That should take about 2 minutes.
Drain the spinach in a colander and then put it in a couple layers of paper towel.
Squeeze out the remaining liquid from the spinach. Perfect…dry as a bone!
*************
Put two eggs in a medium mixing bowl.
With a fork lightly beat the eggs.
Now add:
-15 ounces of ricotta cheese
-the squeezed-dry spinach
-1/2 cup of the grated Parmesan cheese
-1 teaspoon of oregano
-1 teaspoon of salt
-And 1/4 teaspoon of ground pepper
With a spoon mix everything together so that it’s well blended.
****************
Now we’re ready to start layering the Lasagna!
Use a pan that measures 9 inches wide by 13 inches long by 2 inches high.
OK…Layer one
-Measure 3/4 cup of the Sauce and…with the back of a spoon…spread it on the bottom of the pan…This is so the lasagna doesn’t stick to the pan.
From now on, the layering order is going to be…pasta, sauce, cheeses, ...pasta, sauce cheeses, ... pasta, sauce cheeses. !
-Lay 3 Sheets of pasta on top of the sauce. This stuff expands as it cooks so it’s not necessary for it to cover the entire bottom of the pan.
-Spread another 3/4 cup of the Sauce
-Add 1/2 of ricotta mixture by dropping small spoonfuls of it around the pan and spreading them out with the back of a spoon
-Now sprinkle on 1 and 1/3 cups of the Mozzarella cheese
Layer two
-3 more sheets of Pasta
-3/4 cup of the Sauce
-The rest of the Ricotta Mixture
-And 1 and 1/3 cups of the Mozzarella
And for our last layer
-4 Sheets of pasta
-The rest of the Sauce…be sure all the pasta gets covered!
-The rest of the Mozzarella
-And the remaining 1/4 cup Parmesan Cheese
Set the lasagna on a baking sheet with sides and bake it for about 30 minutes or until the sauce is bubbling.
Enjoy!
