Nutella Dessert Dip

Spoon 8-13 ounces of Nutella in a microwave safe glass measuring cup with a pour spout. (The more Nutella you use the thicker your dip will be.)

Heat the Nutella in the microwave for 30 seconds on high. Remove from the microwave.

Pour the cream into another microwave safe glass measuring cup and heat that in the microwave for approximately 30-45 seconds on high heat, until very hot but not boiling.

Whisk the cream into the Nutella until it is completely smooth and blended.

Pour the Nutella Dessert Dip into 8 small serving dishes or espresso cups.

Serve with biscotti or shortbread.

Hershey Kiss Cookie

Heat oven to 375 F. degrees.

Remove the foil from the chocolate kisses.

In a medium bowl, whisk together the flour, baking soda and the salt. Set the bowl aside.

In a large bowl, beat together the shortening and the peanut butter until well blended.

Add 1/3 cup of granulated sugar and the brown sugar. Beat until light and fluffy.

Add the egg, milk and the vanilla – beat well.

Gradually beat the flour into the peanut butter mixture.

Shape the dough into 1-inch balls. Roll the balls in the remaining 1/2 cup of granulated sugar.

Place the balls on an ungreased cookie sheet.

Bake 8 to 10 minutes or until lightly browned.

Remove from the oven and immediately press a chocolate kiss into the center of each cookie. The cookie will crack slightly around the edges.

Remove the cookie from the cookie sheet and place on a wire rack and allow to cool completely.

The chocolate will firm up again once the cookies have totally cooled.

Makes approximately 4 dozen cookies

Chicken Fajitas

Slice chicken into thin strips approximately 3 inches long and set them in a flat glass baking dish.

Squeeze the juice from one lime on top of the chicken.

Mix together sugar, garlic powder, onion powder, oregano, cumin, and red pepper flakes and sprinkle the spices onto the chicken being sure to coat all the chicken.

Pre-heat your oven to 325 degrees. Wrap eight flour tortillas in a clean dish towel and put them in a serving dish. Cover the dish with tinfoil and put it in the oven for about 10 minutes to warm up. Preheat your oven safe serving dish in the oven as well.

In a large preheated frying pan, heat 1 Tablespoon of olive oil over medium high heat. When the oil shimmers, add the sliced onions and pepper and sauté 2-3 minutes or until tender. Season with salt and pepper and remove from pan. Place on heated serving dish. Cover with tinfoil to keep warm.

Add the chicken to the hot pan and quickly sauté until cooked through – approximately 4-5 minutes.

Add the cooked chicken to the serving platter.

Place warm tortilla on a plate; add chicken and peppers and onions and serve.

You can garnish Chicken Fajitas with salsa, guacamole, shredded cheese and sour cream.
