Roasted Asparagus with Garlic Sauce
serves 4
- 1 pound of asparagus (fresh)
- 2 tablespoons of olive oil
- 1/3 cup of mayonnaise
- 1 clove of garlic - grated
- 1/2 teaspoon of salt - course
- 1/4 teaspoon of black pepper
- 1/2 lemon - garnish
Preheat oven to 425 degrees
Wash the asparagus and cut off the fibrous end. Lay the asparagus out on a baking sheet with sides that has been lined with tin foil.
Drizzle the asparagus with olive oil, sprinkle with salt and a few grinds of fresh black pepper
Bake for 10 minutes or until tender and slightly caramelized.
Mix the mayonnaise with the grated garlic. Serve as a dipping sauce or drizzle on top of the asparagus.
Cut the lemon into slices or wedges and add as garnish.
