Fried Goat Cheese Salad
serves 4
- 1 cup of flour
- 1 egg - beaten with 1 Tablespoon of water
- 1 cup of bread crumbs
- 8 ounces of goat cheese
- 2 tablespoons of olive oil
- 1 bag of salad greens (5 ounce bag)
- 12 cherry tomatoes
- 1/3 cup of salad dressing
Put the flour, egg/water mixture, and bread crumbs into three separate dishes.
Slice the goat cheese into 12 disks.
Dredge the disks first in the flour, then dip them into the egg mixture, and finally roll in the bread crumbs.
Heat a non-stick fry pan over medium-high heat. Add the oil and carefully add the coated goat cheese disks to the frying pan. Fry until golden brown, about two minutes, and then gently turn the disks over. Be careful not to puncture the disks or the cheese will spill out! Brown the second side.
Remove the fried goat cheese to a paper towel lined plate so that any excess olive oil will get soaked up by the paper towel.
Place the salad greens on a plate, add the cherry tomatoes and your favorite salad dressing and top with the fried goat cheese.
