ROASTED VEGETABLES AND SAUSAGE

serves 4

  • 3 medium potatoes
  • 1 red bell pepper
  • 1 medium onion
  • 1 pound of turkey sausage
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of garlic - crushed
  • 2 teaspoons of dried rosemary
  • 4 tablespoons of olive oil

Preheat your oven to 425 degrees.

Cut potatoes into about 1 inch chunks.

Remove the stem and seeds from 1 red pepper and cut it into slices.

Peel and cut 1 medium onion half, then quarters, then 1/8’s.

Remove the casing from 1 pound of sausage and cut into 1 inch chunks.

Put all of these ingredients into a large plastic bag

Add the salt, pepper, crushed garlic and rosemary

Pour 4 tablespoons of olive oil over the whole thing and mix it all together inside the bag.

Empty the bag out on to a baking sheet with sides.

Bake in the preheated oven for 20 minutes.

Then with a spatula, give it all a stir and stick it back in the oven for another 15-20 minutes or until everything is crispy and roasted.
