SWEET AND SOUR CABBAGE

serves 6

  • 4 tablespoons of red wine vinegar
  • 1 tablespoon of water
  • 1 tablespoon of sugar
  • 1/2 teaspoon of caraway seeds
  • 1 pound of cabbage - sliced
  • 1 large onion - sliced
  • 1 large apple - peeled and chopped
  • 2 ounces of raisins

In a large Dutch oven or stainless steel pot, mix the (brown OR white) sugar, vinegar, water, and caraway seeds. Cook on medium for 1-2 minutes or until hot and sugar is dissolved.

Stir in the cabbage, onion, apple and raisins.

Cover and simmer 30-40 minutes until liquid evaporates.
(If any liquid is left, turn up heat and boil 1-3 minutes until all the liquid evaporates.)

Season with salt and pepper to taste.
