ENGLISH MUFFIN PIZZAS WITH TUNA FISH

serves 4

  • 1 can of tuna fish (6-7 oz)
  • 1/4 cup of diced celery
  • 2 tablespoons of mayonnaise
  • 1/2 teaspoon of oregano
  • 1 dash of salt and pepper
  • 2 (split in half) english muffins
  • 1/2 cup of tomato sauce
  • 1/2 cup of parmesan cheese

Preheat oven to 350 degrees.

Drain tuna.

Mix together tuna, diced celery, mayonnaise, oregano, salt and pepper to taste.

Put muffins on a baking sheet with sides.

Divide tuna salad equally on two large English Muffins which have been split in half.

Spread approximately 2 Tablespoons of pizza or tomato sauce on each muffin.

Top with approximately 2 Tablespoons of shredded parmesan cheese.

Bake for 15-18 minutes or until the muffins are crispy.
