English Muffin Pizzas with Tuna Fish

Difficulty:

The official name for this recipe is “Chapman Tuna Pizzas”. C.C. Chapman’s father found this recipe years ago. It’s what C.C. ate through his college years. (I survived on hot tuna fish “grinders” with melted Swiss cheese, and my husband ate Indian food, but that’s another story!)

Tuna fish pizza is not necessarily the norm, but boy is it good!

You can find my video on how to make English Muffin Pizzas here.

You can find my blogpost on how to make Tuna Fish Salad here .

Now all you have to do is just combine the two and add a few more ingredients.

To make four “Chapman Tuna Pizzas” you will need:

  • 2 large English Muffins (or 3 regular size)

You will also need:

  • 6-to-7 ounces of canned tuna
  • 1/4 cup of diced celery
  • 2-to-3 Tablespoons of mayonnaise

Next, you’ll need:

  • ½ Teaspoon of oregano
  • 1to-2 Tablespoons of Tomato Sauce or Pizza Sauce

Finally, you’ll be using some shredded Parmesan cheese.

Let’s start cooking!

Preheat your oven to 350 degrees.

You need to begin by making some tuna salad. Directions for doing this are given here. Add less mayonnaise then you normally would. Don’t forget to add the oregano!

Line the muffins up on a baking sheet with sides.

Spread the tuna on the muffins. (I'm using the large English Muffins that measure about 3 inches across.)

Spread the tomato or pizza sauce on top of the tuna.

Sprinkle on some shredded parmesan cheese. (Use fresh, not the kind in the box!)

Bake for about 15 minutes or until the muffins are crispy!

Thanks C.C. (and a special thanks to your Dad!)

I don't know--tuna and pizza sauce together doesn't sound very good to me!  I'm always willing to try something once though. :)

Hi Brooke, when I first saw this recipe I thought the exact same thing.  (Tuna…oregano…pizza sauce…NO WAY!)  Then I tried it.  Wow!  It is a really great combination!  Both my husband and I really loved it.  I hope you do too!

I am looking forward to trying these with the pizza sauce. It sounds like an interesting combo!

But I would like to mention, if you remove the pizza sauce, you get a TUNA MELT! which is one of the most fabulous and convenient hot sandwiches,

It brought a big old smile to my face to see this blog post. I still remember telling you about these on the phone and you wanting the recipe.

It is certainly a weird combination, but a mighty tasty one. I prefer them with straight up tomato sauce instead of pizza sauce and sometime sprinkle a little oregono over the top. Great for eating while watching football!

C.C. thanks for the inspiration!

Will, you are so right!  I like my "Tuna Melts" with Swiss Cheese!
