When you serve …”this 7 layer dip” at your party ,... you’re pretty much guaranteed… there will be no leftovers.
The seven layers are:
First the bean dip …
Second…the Avocado
Third, seasoned sour cream
Fourth, ... a sprinkle of Green onion
Fifth ..Sliced black olives
Sixth…Diced Tomatoes
And finally, ... the seventh layer…shredded Cheddar cheese

We’re going to layer the dip in a serving dish that measures about 9 inches wide by 13 inches long by 2 inches high.
Let’s start layering!
Spread two 10 oz cans of bean dip first. Any brand will do…choose your favorite

Fresh ripe avocados are great!
Cut three avocados in half lengthwise and separate the two sides
To remove the pit, leave the avocado on the cutting board… and gently thwack the pit …with the sharp edge of the knife.
Give the knife a twist and the pit should pop out.
With a spoon, scoop out the avocado and put it in a medium size mixing bowl …
Mash it with a fork or potato masher.
To keep the avocados from turning brown… mix in 2 T. freshly squeezed lime or lemon juice.
Season the avocados with
1/4 teaspoon of salt
1/8 teaspoon of pepper
Spread the avocado dip on top of the bean dip.

The third layer is a combination of 3 ingredients
1 cup sour cream
1/2 cup mayonnaise
1 package of taco seasoning mix
Mix them together in a small bowl and then layer the mixture on top of the Avocado layer

For layer four…wash and trim the ends off 5 green onions.
Line them up and start cutting them into tiny bits about 1/8 inch big.
We need 1 cup in total.
Sprinkle the onions on the dip.

Layer five…the black olives.
Drain 1-2 1/4 ounce can of sliced black olives…spread them out on top of the onions.

Layer six…2 Medium tomatoes which need to be seeded and then diced.
Cut the tomatoes in half NOT from the stem end…the other way.
Gently squeeze the juice and seeds out of the tomato.
With a sharp knife cut the tomatoes into about 1/8th inch bits.
Sprinkle them over the olives.

The last layer is 8 ounces of shredded cheddar.
A box grater makes shredding cheese very easy.
Watch your fingers…these graters are very sharp!
Cover the dip with plastic wrap and put it in the refrigerator until your guests arrive.
Serve this dip with lots and lots of Tortilla Chips…Cheers!
